Biography: He performed his studies in Food Sciences and Novel Foods at the Autonomous University of Madrid. He currently works at the Institute of Food Science Research (CIAL, UAM-CSIC) focusing his research on the revalorization of food by-products as novel food ingredients. He is reviewer of the Food and Bioprocess Technology journal. His main research interests are the chemistry and bioactivity of plant foods and their by-products, including the study of polyphenols, other antioxidants, and dietary fibre, among others.
