Research Interests: Research interests include the study and development of new processes by clean and safe technologies, mainly based on compressed fluids, for the extraction and fractionation of bioactive food compounds (terpenes, quinones, carotenoids, phenolic compounds and alkaloids) from natural sources (plants, seeds, legumes, vegetables, fruits and food by-products), which are be able to be used for the production of functional foods and nutraceuticals.
Biography: Dr. Villanueva Bermejo graduated in Food Science and Technology and obtained a doctorate in Biology and Food Sciences from the Autonomous University of Madrid. At present, he performs his activity at the Institute of Food Science Research (CIAL UAM-CSIC) and participates as a research staff on the management and development of research works for companies as part of the Novalindus platform. His research interests include the study and development of new processes by clean and safe technologies, mainly based on compressed fluids, for the extraction and fractionation of bioactive food compounds (terpenes, quinones, carotenoids, phenolic compounds and alkaloids) from natural sources (plants, seeds, legumes, vegetables, fruits and food by-products), which are be able to be used for the production of functional foods and nutraceuticals.
